Breakfast casseroles are some of my absolute favorite meals! I love them for breakfast or dinner and they're great to serve for brunch during the holiday season.

Today's recipe is full of flavor, super easy to make and a total crown pleaser.

This delicious egg bake is easy to customize depending on what ingredients you have on hand and if there's just a couple of you, the recipe is easy enough to cut in half.

The leftovers are tasty too if you have some left after everyone is finished eating.

Recipes like this are total comfort food to me! They remind me of families gathered around the table for a meal together with lots of laughter, conversation and happiness.

This recipe is great served with a simple fruit salad, some homemade biscuits or cinnamon rolls, coffee or a mimosa.

What is in Cheesy Sausage and Veggie Breakfast Casserole?

  • Spinach: This dark, leafy green is great raw or cooked and you can preserve it by freezing, dehydrating or canning. It contains vitamin a, protein, iron and calcium.
  • Fresh tomatoes: They are technically a fruit since they have seeds, but are prepared or served as a vegetable in savory dishes. They contain lycopene, which has great health benefits, vitamin c, potassium and folate. They are served fresh or cooked and can be roasted, canned, dehydrated or frozen for use later.
  • Milk: cow's milk is a great source of calcium, vitamin D, potassium and it's a complete protein source too!
  • White mushrooms: These mushrooms are very common and their technical name is Agaricus bisporus! They are delicious raw or cooked and I love them sautéed or roasted. They are cheap to buy and contain potassium and protein.

  • Grease a baking dish, evenly spreading hash browns on the bottom

Cheesy Sausage and Vegetable Egg Breakfast Casserole

Yield: 8 servings

ingredients:

  • 1- 12 ounce package breakfast sausage links, cooked and cut into bite sized pieces
  • 1 pound shredded frozen hash browns, thawed
  • 1/2 cup onion, diced
  • 1 1/2 cups white mushrooms, sliced
  • 1 cup spinach, torn into bite sized pieces
  • 1 cup shredded cheese, divided
  • 1 cup tomatoes, diced
  • 10 large eggs
  • 1 cup milk
  • salt and pepper, to taste

instructions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 glass baking dish, evenly spreading hashbrowns on the bottom and sprinkle with salt and pepper.
  3. Cover the hashbrowns with onions, mushrooms, spinach, sausage, 1/2 cup cheese and tomatoes.
  4. In a large bowl, whisk together the eggs, milk, salt and pepper and pour over top of veggies and hashbrowns.
  5. Sprinkle remaining cheese on top and bake uncovered for 45 minutes or until eggs are set.
