Why You’ll Love Cranberry Baked Brie

  • The best soft and gooey texture. When this cranberry baked brie is fresh out of the oven, it’s warm, melted, and gooey. It has the best texture that is perfect for scooping up with a cracker or toasted crostini. Brie is already a soft cheese, and when it starts to cool down a little, it becomes so spreadable. The texture either way is so good.
  • Filled with warm and cozy holiday flavor. I love cranberry anything. And this cranberry baked brie is no exception. With just a couple of ingredients, it's full of holiday flavors. It's the perfect festive appetizer to serve on Thanksgiving and Christmas. But, you might love it so much that you’ll crave it all year round!
  • Perfect for any meal. This cranberry baked brie is best all any time. It tastes great when served as an easy appetizer with dinner, as a snack on game day, to satisfy a late-night craving, or even served alongside a light lunch or brunch. Seriously. Spread it on toast and enjoy. Or include it on your next cheese and charcuterie boards. No matter how or when you serve it, it's likely that there won't be any leftovers.

Ingredients and Substitutions

To make this festive cranberry baked brie, you will need just 2-3 ingredients (full quantities in the recipe card below):

  • brie - you want the brie to be cold so that it doesn't overly bake resulting in cheese oozing out of the cheese before you are done baking. You can even place the brie in the freezer for 10-15 minutes before baking to get it really cold. In this case, you won't need to wait for the cheese to rest for 5 minutes before transferring it.
  • cranberry sauce - You can use homemade or store-bought cranberry sauce, whatever is easier! I used my easy 10-minute cranberry sauce. It's a great way to use up any leftover cranberry sauce after a holiday meal.
  • walnuts - nuts are optional but add a great complimentary flavor and texture. You can substitute with pecans, candied pecans, or pistachios.

This baked brie with cranberry sauce is totally customizable. You can substitute or add in your favorite toppings such as honey, maple syrup, jam, and fresh rosemary.

  1. Add toppings. Carefully transfer the brie to a serving dish (or transfer it with theparchment paper), and evenly top with cranberry sauce, leaving a ½-inch margin around the edges. Sprinkle walnuts on top (optional).
  2. Serve. Serve withcrackers,pita bread,breadsticks, and/or fruit.

TIP: Alternatively, you can add the cranberry sauce halfway through baking and place the brie back in the oven. This will give a messier look with the cranberry sauce dripping down the sides.

Recipe Tips and Tricks

  • How long does it stay melted: Once baked and gooey, it will stay that way for about 10-15 minutes. You can still enjoy it with a knife but to get it back to a melty gooey stage, you will need to reheat it.
  • How to store: Allow the baked brie to cool to room temperature (if it hasn’t already). Then, place in an airtight container or wrap it tightly in plastic wrap and store it in the fridge. Although brie will be safe to eat for up to a week, it’s best enjoyed within 2-4 days when the flavor and texture are still preserved.
  • How to reheat: You can reheat baked brie in a preheated 300F oven for 15 minutes. Only portion as much brie as you intend on eating because reheating the brie multiple times will affect its texture. Also not that reheating will be messy and the cheese will ooze out onto the parchment paper since it has been cut through already. You can also reheat it in the microwave in 10-20 second increments until warm and gooey.

FAQs

Do you take the rind off brie before baking? ›

Keep the rind on, as it will help the cheese hold its shape so it doesn't all melt out. The rind is also edible, so you can enjoy it with the melted cheese, or simply remove the top layer after baking and dunk in crusty bread like a fondue.

Why is my baked brie rubbery? ›

If you left the rind of the cheese on, the baked brie may seem like it is rubbery once heated, or the brie was overcooked by leaving it in the oven too long. To avoid the rubbery texture, remove the rind of the cheese and make sure to not overbake the brie in the oven.

Do you eat the crust on baked brie? ›

No, you don't have to remove the rind before baking brie. The rind is edible and I don't even think you can taste it after the brie is baked. If you want to remove the rind, you can use a sharp knife to carefully cut off the thin rind of the cheese at the top of the wheel.

How long should brie sit out before baking? ›

Unwrap your Brie and place your wheel on a small piece of parchment paper on a baking sheet. Note: if you have the time, take the cheese out of the refrigerator and let it sit on the counter for an hour before baking. This is optional but helps the cheese bake more evenly. Bake for 10-20 minutes in the oven.

What jelly goes best with brie? ›

Brie cheese is the perfect partner to jam! It pairs beautifully with jam varieties, such as: fig, apricot, blackberry, boysenberry or cherry jam.

Why does baked brie taste like ammonia? ›

It may be a turnoff but it's a consequence of aging, especially for bloomy-rind cheeses like Brie. As these cheeses ripen, their surface molds break down protein into amino acids and one byproduct of that breakdown is ammonia. When a Brie is aging at the creamery on a rack, the ammonia is evacuated through ventilation.

How do you know when baked brie is done? ›

Preheat oven to 180°C/350°F (all oven types). Oven: Bake for 15 to 20 minutes (for 250g/80z), or until melted through. For 500g/1lb brie, increase to 25 minutes. To check, gently touch the centre of the brie – it should feel very soft, like it is about to collapse if you press any harder.

Why does my brie rind taste like mushroom? ›

As Brie cheese ages, it develops a stronger flavor and becomes more complex, with earthy and nutty undertones. The rind of Brie has a slightly tangy and mushroom-like flavor that adds to the overall taste experience.

How do you eat leftover baked brie? ›

As the baked brie sits out, it will harden. You can store leftover brie in an airtight container in the fridge for a couple of days and reheat it in the microwave or oven to make it melty again. Use a baking dish if you are reheating it as there isn't a rind holding the cheese together.

Is brie good for your gut? ›

Based on some studies, there are many health benefits of eating brie cheese. According to some studies, it might reduce inflammation and improve immunity. It might also aid in digestion if had in moderation.

What is the white stuff on brie? ›

That marshmallowy white stuff on the outside of your brie is called a bloomy rind. These cheeses are coated with edible molds, such as Penicillium candidum. The cheeses ripen from the outside-inwards. Sometimes, a seductive gooey layer called the “creamline” forms around the fudgy interior.

How to make brie taste better? ›

What does brie cheese go well with? Seriously so much. You can pair it with something sweet like honey, jam, or berries, or you can go more savory with nuts, veggies, or red pepper jelly.

Are you supposed to remove the skin from brie cheese? ›

Yes, you can. The skin, better known as the rind, on brie adds extra flavour and potency to the cheese. However, you don't need to if you find brie flavoursome enough on its own.

Do you have to remove the outer layer of brie cheese? ›

Should you eat the rind, or leave it alone? In most cases, you'll want to eat the rind because that's where a lot of the flavor is. If you're trying brie for the first time, definitely bake it.

What do you do with brie rinds? ›

The easiest way to use cheese rinds is to cook them on the grill, griddle or barbecue, hardest side face down. Alternatively, you can simply bake them in the oven until they soften. Serve immediately, perhaps with vegetables or cold cuts.

How to eat brie cheese correctly? ›

To eat Brie, first remove it from your refrigerator and let it rest at room temperature for about 30 minutes. This allows the brie to become softer and more flavorful as it warms. Once softened, simply slice your brie into small wedges, without removing the edible, flavorful rind.
