Years ago when visiting some relatives in Cincinnati, I had the “Cincinnati Chili,” and this recipe reminded me of that but without the cinnamon, cloves or chocolate. I got this recipe out of a library book that I really like called Quick Meal Solutions. It’s full of great ideas for fast, easy, healthy, family friendly meals. I can see this recipe becoming a family favorite at our house, just like the Taco Spaghetti.

Here is what you need:

  • 10 oz. spaghetti
  • 1 tsp. oil
  • 1 pound ground beef
  • 1 medium onion
  • 1 garlic clove
  • One 26 oz. jar pasta sauce
  • One 15 oz. can kidney beans, drained and rinsed
  • 2 T chili powder
  • optional: cheddar cheese, sour cream, green onions, fritos or tortilla chips

Heat oil, and cook ground beef, onion and garlic, then drain.

I already had my ground beef cooked, so I just sauteed the onion and garlic, and then added my beef, pasta sauce and chili powder. After that has warmed through, add your drained and rinsed kidney beans and cook for about 5 more minutes.

Cook your pasta according to package directions.

After pasta is cooked and drained, you are ready to serve.

Serve chili over spaghetti noodles and top with cheddar cheese, and if desired, green onions, corn chips and sour cream.

  6. We ate homemade chili over spaghetti and rice growing up. I thought it was normal…I think Mama did it to stretch the meal. I still like to serve a side of rice with mine but haven’t had it with spaghetti in a long time. Thanks for the rekindled memory.

  7. The first time I ever had Cincinnati Chili was at the Sky High Place in Cincinnati, it was wonderful. I even have a recipe for it in my cook book Miz Helen’s Kitchen Table.   8. Whenever we go to Steak n Shake my Son’s favorite thing to get is Chili Mac. It’s pretty much just chili over macaroni noodles. This reminds me of that. I bet my son would love it!

  13. I LOVE Cinncinnati chili spaghetti! I have never been able to recreate it but I love the taste of cinnamon in mine. So you would suggest cloves and chocolate (cocoa??) to achieve that “Cinncinnati” flavor? I’m curious what I should try…!

  14. This is perfect for me. I’ve been wanting to have the cincinnati version though the thought of cinnamon, cloves and chocolate always scares me off.
