Turkey Roll Ups (Costco Copycat Recipe) (1)

Pairing cranberry sauce with turkey is not novel. After all, we do it every year at Thanksgiving. But adding cream cheese to cranberry sauce makes a delicious spread for Turkey Roll Ups (as Costco figured out long ago).

These bite-sized sandwich wraps are easy to make and perfect for toting to parties. Cut them in advance and arrange on a tray, or save the slicing until you arrive at your destination. Parents will appreciate a healthy option and kids simply love the taste.

At a Glance: Here is a quick snapshot of what ingredients are in this recipe.
Please see the recipe card below for specific quantities.

Ingredient notes

  • Cranberry sauce: Canned cranberry sauce is fine. If you prefer to make homemade cranberry sauce, bring ½ cup sugar, ¼ cup water, and ⅛ teaspoon salt to boil.Stir occasionally to dissolve the sugar. Stir in 6 ounces fresh cranberries. Simmer until slightly thickened and the berries begin to pop, about 10 minutes.Remove from heat and chill.
  • Tortillas:Square Lavash bread can be substituted for the tortillas (that is what Costco uses). If you use square flatbread, there are no wasted ends that need to be trimmed away.

Step-by-step instructions

  1. To make the cream cheese mixture, in a small bowl, mix cream cheese with cranberry sauce until uniformly combined. Lay one tortilla flat on a cutting board and spread a thick layer of cream cheese all the way to the edges. Layer 3 lettuce leaves down the middle of the tortilla.
Turkey Roll Ups (Costco Copycat Recipe) (3)
  1. Layer two slices of turkey and 4 pieces of Swiss cheese on top of the lettuce. Top with several slices of tomatoes. Starting at one end of the tortilla, roll tightly towards the filling. Continue rolling until the filling is tightly wrapped and the cream cheese holds the rollup together.
Turkey Roll Ups (Costco Copycat Recipe) (4)
  1. Continue with the remaining tortillas until all have been assembled. Wrap each tortilla rollup tightly in plastic wrap.
Turkey Roll Ups (Costco Copycat Recipe) (5)
  1. Chill the wrapped rollups in the refrigerator until serving time. To serve, trim any unfilled ends away with a sharp knife. Slice each tortilla into 8 equal pieces.

Recipe tips and variations

  • Yield: This recipe makes enough appetizer-sized servings, 4 roll ups each, to feed 16 people. Double or halve the recipe as appropriate for your crowd.
  • Storage:Store leftovers covered in the refrigerator for 1 day.
  • Make ahead: Assemble roll ups up to 24 hours in advance. Slice when ready to serve. This works for meal prep, but you cannot make several days’ worth in advance without a decline in quality.
  • On the side: If you’re serving these roll ups for lunch, offer a salty snack on the side such as Homemade Chex Mix or Ranch Oyster Crackers. For parties, round out your menu with a hot and hearty appetizer such as Mini Twice Baked Potatoes or Bacon Wrapped Water Chestnuts, and some colorful salads such as Broccoli Salad, Cold Pasta Salad, or Kale Salad.
  • Leftover cranberry sauce: If you have extra cranberry sauce on hand (from a can or because you made it yourself), it’s fantastic in my easy Cranberry Cheesecake Galette.
  • Leftover cranberry cream cheese: If you have extra cranberry cream cheese spread, it’s delicious on homemade bagels or as part of a Bagel Bar. Personally, I like it with cut-up fresh fruit on a Fruit Platter, too.
  • More meats and cheese: Look beyond turkey pinwheels and try chicken, ham, salami, smoked salmon, or turkey bacon, or roast beef. Cheddar cheese, Swiss cheese, American cheese – they’re all good!
  • More veggies: Try cucumber, red peppers, fresh spinach, green onion, corn, sun-dried tomato, avocado, and sprouts. Aim for a variety of textures (some soft, some crunchy).
  • Sauces: Instead of the cream cheese, try mayonnaise, pesto, honey mustard sauce, ranch dressing, barbecue sauce, hummus, olive tapenade – the list goes on! Any of these can work as a glue to hold your wrap together, or serve on the side for dipping.
